The latte art atlas
Latte art is drawn, so it is best learned from drawings. Six pours, from the first heart to the swan, each sketched as the path your pitcher actually travels: where to start, where to wiggle, when to lift and cut.
The milk, in brief
- Cold whole milk, cold pitcher, filled to the spout base.
- Tip just under the surface: a short, papery hiss, then stop adding air.
- Sink the tip, find the whirlpool, heat to 55 to 65 C.
- Swirl until the second you pour. Good milk looks like wet paint.
The classic mistake is stretching too long: big slurps of air make bubbles no swirl can save. Hiss briefly, then just roll.
